Heh! My best friend is a very very very large former NFL football player from the state of Georgia... they take their BBQ serious down there. I am proud to announce that he declared my pulled pork "worthy" yesterday when he stopped by and ate some. He is not a guy you want to give bad BBQ to! Dodged a close one there.... lol

I've never smoked with maple before. Almost always cedar, pecan, apple, oak, or cherry wood. The wife doesn't like hickory or mesquite so I don't use those.

Yeah that's what grows around here, it's a lighter flavour than hickory and saturates the meat a little more thoroughly, but burns way hotter... so i have to use a smoker with a sidecar.

It's a celtic name, my family is welsh, it's also a type of oak tree. My son's name is Liam, he's 9 now and way into slaying dragons with his wooden sword...

Martial Arts is my way of Life.

When I get up in the morning i run the complete heian system form. My spare time is spent reading or writing about combat and combat systems. I watch TV while in a 2nd degree horse (mountain) stance, and as I type this I am doing an Isometric wall sit.

I have studied Combat Systems Since i was 6, more than 25 years.
my first system was german saber, then judo and karate and taijutsu. After that was sambo and fillipino stick and knife fighting.
    Then Theriputic Crisis Intervention (TCI).

I participated in MMA back in the 1990's when it was actually no holds barred.

I majored in kinesiology, focusing on combat science at IUPUI.
I also taught self defense at IUPUI for 3 years.
After that I taught at a private Combat club.

Now I make and customize martial arts weapons, and it's not as expensive as you might think.
